It was daunting to begin with, especially with the language barrier, but we detail the step by step process below.
TLDR: We asked to do a few slices of sashimi and the rest in a chirashi bowl - mixing 2 cuts: medium fatty & lean.
It was mesmerizing to watch the master sushi maker prepare the final forms
The key part that separated this sushi from everything else we’ve ever had was the rice. It was the best sushi rice we’ve ever had - that toasted sesame with the texture was perfection. We’ll be dreaming about this for years to come.
